Although seven grape varieties can be used to make champagne, the Chardonnay, Pinot Meunier, and Pinot Noir varieties account for more than 98% of the production. Pinot noir is the king variety of the Montagne de Reims (Reims Mountain) champagnes. It gives the wine body and red fruit aromas. Cool, chalky soils suit it. The wines of this terroir are distinguished by a pronounced structure. A champagne can be a “blanc de blancs” if it is made from Chardonnay and “blanc de noirs” if it is made from Pinot Noir or Pinot Meunier.
