The 286-metre-high Montagne de Reims (Reims Mountain), where the most prestigious vineyards of Champagne are located, is topped by forests on its ridges. These beech and oak forests play an important role in regulating the temperature. In the evening, the cold air descends into the valleys and the warm air that has formed during the day over the Reims Mountain is deposited on the slopes where the vines grow.
