The Pinot Noir (Vitis Vinifera) is identified by the richness and the complexity of its body. The Pinot Noir is a very old wine variety, it belongs to the family of the “Noirien”. This variety of wine is the ancestor of numerous wines such as Chardonnay, Aligoté, and Gamay. The grapes are small black with blue shades and compact, their skin is fine and delicate. At the first press, juices are sweet. This variety is difficult to produce, the northern continental climate helps the grapes to flourish fully and express their complexity. White wines are also made out of Pinot Noir.
