The new cellar master of Clément rums

On December 31, 2020, after a thirty-year career at Habitation Clément, its historic cellar master, Robert Peronet, officially retired. He passed the torch to Julien Thimon (photo), whom he trained for eighteen years. It is now up to him to manage the twelve thousand 200-liter barrels distributed in the six aging cellars of Habitation Clément. Mainly based on passion and empirical knowledge acquired over time, experience, and daily work, the function of cellar master plays a key role for all brands of spirits. A good cellar master ensures the assembly of the rums. He must be able to project himself by tasting them and know how to choose the barrels in order to direct the rums toward what he seeks to obtain. On the occasion of the departure of their former cellar master, an exceptional signature cuvée baptized Robert Péronet and distributed in 1,330 bottles was developed in collaboration with all the staff of Clément rums to pay tribute to his work.
