In Provençal dialect, pastis means mixture. Henri Bardouin pastis is renowned as a top-of-the-range and complex herbaceous blend, unique in the world, composed of sixty-five plants and spices. It is made with natural products - thyme, rosemary, savory, verbena, sage - harvested on the Forcalquier terroir, to which are added plants and spices from distant countries such as star anise and licorice. This recipe, far from the usual monolithic notes of fennel-licorice-star anise, was developed by Hélène Rogeon, a woman oenologist.
