The link between food and milk

Studies have shown the link between cattle feed and milk. For example, when there is too much corn and soya in the herd’s diet, milk becomes too rich in saturated fatty acids. In contrast, an exclusive diet of grazed grass and hay reduces the proportion of these fatty acids. Brie de Meaux, described as the king of cheeses, must be made with raw (unpasteurised) milk, hence the importance of monitoring the cows’ diet in the hours before milking. Chicory, mouldy straw, turnips and lupines make the milk bitter. Garlic, chives, leeks, and mugwort make it pungent.
