Since 2016, the Buron de la Treille in the Lozère department, has become the only buron (old stone shelter) still active on the Aubrac plateau. Taken over by five partners, this Historical Monument from 1874 was only one among thousands still in operation at the start of the 20th century. The Buron de la Treille is the unique site from the production of Laguiole Buron PDO cheese, using the milk of some sixty Simmental and Aubrac cows from two different farms. The cows are milked using a mobile hut to follow the rotating grazing system, and the cheese production is modeled on that of the Salers cheers using a wooden stick to curdle the milk.
