Romanesco cabbage

With their pyramidal endings, Romanesco cabbage (Brassica oleracea 'Romanesco') is distinguished by its fractal shape. This is a geometric shape that repeats itself identically, whatever the scale of observation. The structure of cabbages is formed by buds destined to become flowers, but which in reality never reach their goal. Instead, they develop into stems. The difference between romanesco and its cousin cauliflower? Whereas in cauliflower, bud production follows a relatively constant rhythm, in romanesco it accelerates progressively, leading to the fractal, pyramidal shape.
