Lavenders grow in areas subject to a Mediterranean-type climate in degraded environments (arid, limestone, stony lands) and on the adret (south face) of the slopes. Aromatic, edible and non-toxic, they belong to the botanical family of lamiaceae like sage, thyme, savory, oregano, mint and hyssop. They are directly processed and distilled by producers in cooperatives or sold to brokers or perfumers.
