The late harvest takes place about a month after the end of the traditional harvest. They are made on so-called noble grape varieties such as Gewurztraminer, Pinot gris, Riesling or Muscat and more commonly in Alsace. This specific type of harvest consists of waiting for the grape to exceed its maturity threshold to promote so-called ‘noble’ rot. This rot generates a high concentration of sugar and aromas.
