The selection of the best fruits
On the Côte de Nuits, all the harvests are done by hand. Three sorting steps are necessary to select the best fruits. In the vineyard, the cutters make a first selection. The bunches are meticulously cut, put in baskets and transported by porters to the truck. In the truck, the pickers carry out a second sorting. They remove all inferior leaves and clusters. The third sorting is done in the cellar, before fermentation. The grapes are placed on large tables for a final selection.
