'Rue de la Boucherie'

The Rue de la Boucherie (the butchers’ street), whose corner with the Rue Notre-Dame is marked by the statue of the Virgin and Child (photo), is part of the old trading district of the town of Besse. The street pavement is sloped to facilitate the evacuation of organic residues, since in the Middle Ages animals were slaughtered directly on the street which was then washed down with water.
