The oyster tables are one of the hallmarks of the Leucate pond. On these stilts structures hang the ropes to which the oysters are attached. It allows their breeding in conditions simulating the rhythm of the tides. It helps to create a challenging environment that gives the shellfish a firmer, crunchier texture, typical of oysters farmed in the region. The production of Languedoc-Roussillon represents a tenth of the French production of oysters.
