The only survivor of the thirty-three master mustard makers of Beaune of the start of the 20th century, the Moutarderie Edmond Fallot produces five million jars each year in its factory established in Beaune in the Côte-d'Or department since 1840. The SME with around twenty employees represents only 5% of the French market but enjoys a good reputation abroad, particularly in the United States, Germany, and Japan, where it exports half of its production. In France, Edmond Fallot mustards have established themselves as a reference in the delicatessens and in the kitchens of starred establishments from Robuchon to Bocuse via the Burgundy Lameloise house.
