These kilometres of galleries in the Cité du Champagne Collet-Cogevi – the cellars of the Maison Collet located in the Marne, in Aÿ-Champagne – demonstrate the patience of the winegrowers. Time and patience are essential in the making of a wine. Filled with silence, these chalk and brick galleries were dug more than 35 metres underground in 1880. Even the lighting remains discreet so as not to disturb the miracle that is accomplished in each of the bottles stored here. It is indeed the soul of Champagne that slumbers.
