Mandatory identification of Cantal

An Auvergne cheese made from raw or pasteurized cow's milk, Cantal has benefited from a Controlled Designation of Origin (AOC) since 1956 and a Protected Designation of Origin (PDO) since 1996. As such, its identification is mandatory. It goes through a rectangular identification plate, brown for a Cantal made from pasteurized milk and green for a Cantal made from raw milk. To distinguish the farm, artisanal, dairy, or industrial productions, the farm Cantal also has a Cantal Fermier imprint in relief on both sides.
