The production of Salers PDO cheese concerns around 78 farm producers and eight refiners. They annually manufacture 1,200 tons of cheese from the approximately 3,170,065 gals (12,000,000 L) of milk produced by their 4,500 dairy cows of various breeds. Out of the 78 producers, only 24 ripen their whole production directly on the farm, and eight refine only part of it. Most of them (63) sell their products on the farm.
