A 19th century French physician and physicist, Jules Guyot published, in 1868, the book “Study of the Vineyards of France”. Result of six years of research in 71 wine-growing departments, his work reports on the vinifying process and revolutionizes the cultivation of vines. Jules Guyot advocates new winemaking practices, such as planting vines at regular intervals to be able to till the soil with a horse-drawn plough.
