The parchment (or parch) is a kind of malleable shell that isolates the two coffee beans from the pulp of the fruit. It must be kept during the drying process to protect the beans from moisture and to prevent quality loss. This cartilaginous wrapper is removed after the drying phase: the coffee is husked.
