The Étang de Thau is a lagoon pond mainly known for oyster and mussel farming and its waters covered by shellfish beds. As there is no tidal system in the Mediterranean Sea, the collage technique is widely used on the Étang de Thau. It consists in gluing the spats - young oysters only a few months old – with cement, one by one on ropes. They are then left to grow there, submerged under water. The oysters from the Étang de Thau, better known as Bouzigues oysters, benefits from unique natural conditions during their development.
