Known for its cows, the Aubrac plateau is also famous for its ‘burons’. These small houses with a lauze roof (a flat and fine stone used as a tile) are scattered on the plateau and are often rebuilt, more or less authentically. Some of these old shelters for breeders have even been transformed into lodges and restaurants. The ‘Buron de Cap Combattut’ in Marchastel is among them. Their stones bring the visitors back to a time when shepherds and herders took shelter from the ‘burle’, a formidable west wind.
