While harvesting is mostly done during the day, some winemakers prefer to do it at night to limit the oxidation of the fruit. These night harvests also represent an energy saving. For rosé and white wines in particular, the grapes need to be fresh before being transformed into wine. Warmed grapes must be cooled down in the cellar, which implies an expenditure of energy.
