Harvested shortly after the vines
The olive harvest of Château Léoube estate begins just after the end of the wine harvest and lasts about three weeks. It takes into account the varieties cultivated, the maturity of the olives, their veraison - that is to say their change in color - and the weather conditions. No less than fifteen people are needed to pick the fruits of the 5,000 or so seaside olive trees of the Var property.
