The harvest usually starts 100 days after the first flowers, once the grapes have reached full maturity. In Burgundy, it takes place around mid-September, but the starting date is traditionally set by the prefecture of each department, after a meeting with representatives from the producers’ unions and agents of the INAO (National Institute for Origin and Quality). Barring exemptions, winemakers cannot begin harvesting before the official date.
