Georges Rasse, the owner and operator of the Hautes Collines vineyard in Saint-Jeannet has made a rare choice that sets him apart from all the other winemakers in Provence. He indeed endeavored to age his rosé and red wines in the sun. This winemaking method allows Georges Rasse to work on the oxidation of his wines and give them mature aromas while preserving a freshness typical of young wines. Decades of research have enabled him to transform an initially empirical approach into complex know-how.
