From Léon Bouley to Edmond Fallot

The history of the Edmond Fallot mustard factory began with Léon Bouley who, in 1840, founded in Beaune (Côte-d'Or) an oil mill and a mustard factory that quickly became recognized and rewarded. His successors preserved his notoriety by attaching the greatest care to the quality of their products and by combining tradition and innovation. At the beginning of the 20th century, new recipes expanded the range of products with the manufacture of mustard with pure verjuice of Burgundy launched by M. Jacob (1923) and the extension of the production to canned vinegar by M. Paul Chateau (1925). Such innovations paved the way for the development driven by Edmond Fallot on his arrival in 1928.
