In the manufacturing of cheese, the operations of cutting and mixing the curd, or coagulated milk, consist in breaking it up. It must become particles the size of a grain of wheat to a grain of corn to allow its dehumidification and the evacuation of the whey, or lactoserum. Once the whey is removed, the curd can be assembled into a compact mass for pressing.
