Hautvillers abbey stands symbolically as the cradle of champagne. It was founded in 650 by St. Nivard, Archbishop of Reims, when a dove showed him the place to build a new monastery. Thriving in the Middle Ages, the abbey gradually declined until the arrival of a young monk, Dom Pierre Pérignon, in 1668. A fine winegrower and oenologist, Dom Pérignon turned around the abbey's accounts and gave it a fresh start. In the 19th century, Saint-Sindulphe became the parish church of Hautvillers, but the abbey was sold and belongs now to Champagne Moët & Chandon.
