On the Valensole plateau in the Alpes-de-Haute-Provence department, lavender is earlier than lavandin. It is harvested from mid-June to early July, while the lavandin harvest begins around July 10 and continues until the end of the month. Harvesting is possible from the third year after planting. It generally begins three weeks after the first flowers bloom, when the plant has reached maturity and the flowers are three-quarters withered.
