Fish remain the staple food of Polynesians who often fish themselves to feed their families. The large pelagic preys such as barracudas, tunas or mahi-mahi (dolphinfish dorado) are reserved to more sporting fishing. They are prepared and cut immediately after their taking to be preserved in the best conditions.
