Salt-meadow lambs are bred in the extensive system. Animals cover long distances to get from farm to pasture and for food. These long walks improve the quality of the meat: the lambs are leaner and less fat. They feed on plants adapted to the salinity of the soil, giving a different taste to their meat. On the menu: puccinellia (Puccinellia maritima), glasswort (Salicornia europaea), red fescue (Festucetum littoralis) and obione (Halimione portulacoides).
