Expanded polystyrene (EPS) trays, made from oil and hard to recycle, remain the standard for showcasing the take-out seafood offered at the Marché aux Poissons (Fish Market) of Trouville-sur-Mer in the Calvados department. The expanded polystyrene for food use is thermoformed or injected with an expansion gas into molds in the form of trays. It constitutes a quality thermal insulator (thermal conductivity between 0.030 and 0.038 W/m.K) and does not absorb water. Filled with crushed ice, it remains highly suitable for the transport of seafood prepared by fishmongers.
