Assessing grape maturity

Before starting to harvest, the winegrower must assess the maturity of the grapes. This assessment is usually carried out at around 100 days after the first flower bloomed. But many climatic and viticultural parameters must be considered: the grape variety, the latitude of the vines, their exposure, and the desired style of wine. The grapes must also have reached a stabilized sugar to acidity ratio before starting to harvest.
