The décavaillonnage (stripping) consists of working the soil between the vines. At the end of winter, horse plows turn over the earth lying at the foot of the stumps to eliminate the weeds. Their presence favors spring frosts and harms the vine's health. The removal of weeds constitutes one of the most delicate tasks in the maintenance of the vineyards. The risk of deterioration of the vine stock still exists but diminishes thanks to the horses. The Champagne Marguet domain has used horses since 2010.
