The tradition of salt meadow lambs goes back over a thousand years. Crossing the Couesnon dam, another world opens up. Licked by the high tides, the salt meadows, or polders, offer a completely different vision of the bay: sharp green high grasslands where about thirty halophilic (salt-tolerant) species are hidden, including glasswort (Salicornia europaea). Today, there are only five farmers producing the famous Mont-Saint-Michel lambs which received the Prés-salés du Mont-Saint-Michel label of origin in 2009.
