Cotentin donkeys (Equus asinus) are animals renowned for their strength and gentleness. Brigitte Pieau raises about twenty of them at the Domaine d'Esthine, with a lot of respect and love. The donkeys are only mated every 2 years, which gives them a period of rest and good physical condition between births. During the 3 months following the birth of their foal, the donkeys are not milked, which allows the babies to grow up at a good rhythm. From their second trimester onwards, excess milk is used in the Domaine's saponification workshop.
