Once harvested, the coffee cherries must be processed to release the beans they contain. They can be treated in two ways : the dry method (photo) or the wet one. The dry method consists in letting the cherries dry in the sun in the open air until the grains can be heard rolling inside the hulls. The cherries will then be shelled and the gray-colored beans of this 'shell coffee' will be extracted.
