Two main methods of coffee processing:
1 / Dry or natural method: the whole coffee cherry is sun-dried: the pulp, the mucilage, and the parch dry together around the beans and form a crumbly husk.
2 / Wet method: the fruit is mechanically pulped, fermented and washed: the beans in their parchment are sun-dried or put on sheltered dryers.
In both cases, the coffee is manually brewed several times a day to ensure even drying, and once dry, it is husked or peeled.
