The grape harvest in Burgundy traditionally takes place in September. It is about 100 days after flowering that the bunches come to term. Their maturation depends on the sunshine received during the summer period and experiences a 10% extension if the weather has been cooler than expected. The final decision rests with the winegrower who, by tasting the grapes, evaluates the timing of the harvest. The regional harvesting process always begins with the Mâconnais in the south before going up to the Côte Châlonnaise, the Côte de Beaune, and the Côte de Nuits, ending with the Chablisien and the Auxerrois.
