The fruits from the olive groves surrounding the Saint-Georges chapel of Château Léoube estate in Bormes-les-Mimosas are transformed into oil at the Haut Jasson mill. For 15 years, Olivier Roux, its artisan miller, has been in charge of the production of the oil sold at the estate. The olives are first cleaned of all impurities (stones, earth, dust) in a washing machine before being crushed whole, the acidity of their kernel contributing to the preservation of the oil.
