Pinot Noir is a very old grape variety mentioned as early as 1375. The father of a multitude of grape varieties such as Chardonnay, Aligoté, or Gamay, it is at the origin of the great family of Noiriens and the most renowned red wines of Burgundy. Marc de Bourgogne results from the distillation of the press residue from red wines. It benefits from an AOC (Controlled Designation of Origin) since a decree of March 17, 2011. The Edmond Fallot mustard factory flies the colors of its region with its mustards flavored with Pinot Noir and Marc de Bourgogne.
