The material used for cheese making is increasingly made of stainless steel, like in La Grange de la Haute Vallée cheese manufacture. It meets the requirements of the regulations on materials suitable for contact with food, with the possibility of an exemption for traditional materials such as wood. The wooden gerles still used in the production of Cantal fermier and Salers cheese have thus been widely replaced by stainless steel vats.
