Salt marshes known for their pink color

The salt marshes of Aigues-Mortes have been used to harvest Camargue fleur de sel since Antiquity. These salt flats are recognizable by their unique pink color and the population of flamingos that inhabit them. They constitute the main reserve for these large wading birds in Europe. The color of the flamingos and the salt marshes of Aigues-Mortes comes from the presence of the Dunaliella salina microalgae. It serves as food for the shrimps eaten by the flamingos and contains high levels of carotene transmitted throughout the chain.
