To stir the curd and extract the whey, the artisans of La Grange de la Haute Vallée cheese manufacture use stainless steel stirrers and whips or plastic curd scoops. Stainless steel has widely replaced wood and aluminum, fragile and sensitive to detergents, in cheesemaking equipment. As for plastic, it is used occasionally, but it poses bacteriological problems because of its porosity.
