Oysters from Normandy and elsewhere

At the Trouville-sur-Mer Fish Market, one can find local oysters from Normandy, such as Utah Beach oysters, but also oysters from the Marennes-Oléron basin, such as the Gillardeau (foreground). The Gillardeau, named after the family of oyster farmers who raise it, was born in 1978. The development of these oysters fed on plankton in deep waters for more than three years requires numerous and precise manipulations, including regular turnings and cleanings. The No. 2 displayed on the label corresponds to a size designating oysters from 3 to 3.8 oz (86 to 110 grams).
