Hectares of polders

On both sides of the Couesnon river, a different world unfolds. Reclaimed from the ocean, the polders owe their existence to the dikes built over the centuries to protect them from the repeated battering of the sea. Washed by the high tides, the salt meadows offer a completely different picture of the bay: high grasslands, a bright green under which about thirty halophilic (salt-tolerant) species hide, including the glasswort (Salicornia europaea). This is the home of the famous salt-meadow lamb with its delicious taste.
