While the mustard made in Burgundy is both a signature of French gastronomy and an important export product, most of the seeds used for its manufacture are harvested abroad, and, in particular, in Canada or Germany. Traditionally the leading producer and exporter of mustard seed, Canada has recently been overtaken by Nepal, where mustard seeds are grown for the manufacture of oil used in Asia for massage, hair care, and even cooking. As for France, it ranks behind Nepal, Canada, Russia, Myanmar, Ukraine, the United States, China, and Kazakhstan.
