Georges Rasse, the owner-operator of the Hautes Collines (High Hills) vineyard in Saint-Jeannet, naturally stabilizes his wines. He does so by conserving them from three months to two years in carboys placed on the terrace of the cellar of the estate. Only cylindrical white glass carboys can be used so as not to modify the wine and in order to preserve all its fullness.
