After the drying process, coffee beans are cleared of their parchment and sorted. Undesirable elements such as pieces of parchment, skin, and malformed, black or white beans. They are separated according to their size for a more regular roasting. The green coffee is then bagged and stored at 12% moisture, waiting to be exported or roasted.
