The vineyards of Saint-Jeannet in the Alpes-Maritimes department have ceased their activity one after the other for lack of economic viability and valuation of their products. However, the Hautes Collines estate has been able to respond to the new demand for original wines destined for occasional consumption. Over four generations, it has developed its own empirical method of maturing wine in carboys in full sun for several months, thus supplying a niche market.
